I really enjoy beef jerky but drying meat on a cross grain cut results in subpar product. Biltong is dried in larger pieces, then cut into thin strips against the grain. This results in much more consistent slices and a much more tender snack than beef jerky. I've ordered several packages of this now and they are mostly great. The first was just about perfect, only a handful of slices were much wider or narrower with very few fines. Other packages have had more inconsistencies including more fine bits and one package that was less lean and didn't seem dried quite as well. It was still perfectly edible but the texture was less pleasing. That's a relative comparison because it was still very good. That single package was a 3.5 star while others were 5.

The flavor is ok but the spice is almost nonexistent. It’s super greasy/oily, with big pieces of fat, so if you’re expecting a nice lean, dry, and spicy biltong, this is not the right one to try. I took the photo to try and capture the shiny, wet, translucent appearance of this biltong but it’s hard to see. Maybe it’s just personal preference but I’m used to biltong being dry and opaque with nearly zero fat chunks and not leaving a film of oil on my hands after eating it.

When I first opened the package the smell surprised me. If you’re looking for typical, this isn’t for you. This is not a standard bag of “jerky”. This is biltong. When I took the first bite I was put off by the blend of seasonings. The meat was in small very thin strips or thin chunks. The meat was easy to bite through. The meat was clean and not greasy! But the blend of spices????? It didn’t seem right. I closed the bag, put it in the cupboard and quickly realized I had a problem. Fifteen minutes later I was craving a piece. Ok...ok...the rest of the bag over the next 1/2 hour. Something about the spices, the texture and the smell! I have already ordered another bag. So, the question everyone keeps asking. IS IT BETTER THAN JERKY? The answer is, “No, but it is different than jerky.” To steal from a famous fast food chain...”Ayobo-Yo Biltong is different, different is good.”
